For the chia pudding:
- 1/4 cup chia seeds
- 1/2 tsp turmeric powder
- 1/2 tsp ginger powder
- 1/2 tsp ground cinnamon
- 1 cup coconut milk
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- Whisk all the chia pudding ingredients together in a bowl until smooth.
- Let mixture sit for 5 minutes, then whisk again.
- Cover bowl and place in the fridge overnight.
